This comes with a cap of crackling that can't be rivaled and the meat is tender and super flavourful. Roast hot, throw your veggies around it to soak up the flavour and voilá! You can also roast low and slow, finishing with a blistering hot heat to get the crackling to puff up. Think 225 F for 2 hours and then 300 for 1 hour and then finishing it off under broil for a couple of minutes! Just pay close attention with the broiler so you can get the puffed crackling, and not burn it.
